Description

Tender Braised Beef Brisket is a rich, slow cooked beef brisket recipe made with onions, garlic, broth, and herbs until perfectly fork tender. This oven braised brisket is a comforting family dinner that delivers juicy sliced beef, savory pan sauce, and classic homestyle flavor for holidays, Sunday suppers, and make ahead meals.


Ingredients

3 to 4 pounds beef brisket

2 teaspoons salt

1 teaspoon black pepper

2 tablespoons olive oil

2 large yellow onions, sliced

3 carrots, chopped

2 celery stalks, chopped

4 garlic cloves, minced

2 tablespoons tomato paste

3 cups beef broth

1 tablespoon Worcestershire sauce

4 sprigs fresh thyme

2 bay leaves


Instructions

1. Pat the brisket dry with paper towels and season both sides with salt and black pepper.

2. Heat olive oil in a large Dutch oven over medium-high heat. Sear the brisket for 4 to 5 minutes per side until deeply browned, then transfer it to a plate.

3. In the same pot, add the onions, carrots, and celery. Cook for 6 to 8 minutes until they begin to soften.

4. Stir in the garlic and tomato paste and cook for 1 minute, stirring well.

5. Pour in the beef broth and Worcestershire sauce, scraping up the browned bits from the bottom of the pot.

6. Add the thyme and bay leaves, then return the brisket to the pot. The liquid should come partway up the sides of the meat.

7. Cover tightly and bake at 325°F for 3 1/2 to 4 hours, or until the brisket is fork tender.

8. Remove the brisket from the pot and let it rest for 15 minutes.

9. Slice against the grain and serve with the vegetables and braising sauce spooned over the top.

Notes

Searing the brisket well at the beginning builds a deeper flavor in the final sauce.

Slice the brisket against the grain so every serving stays as tender as possible.

This dish tastes even better the next day after the flavors have had more time to settle together.
