Description

Mint Brownies are a rich and fudgy chocolate dessert layered with creamy peppermint filling and smooth chocolate topping, making them the perfect mint chocolate brownies for holidays, parties, and easy homemade dessert trays.


Ingredients

1 cup unsalted butter, melted

2 cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

3/4 cup unsweetened cocoa powder

1 cup all-purpose flour

1/2 teaspoon salt

3 cups powdered sugar

1/2 cup unsalted butter, softened

1 1/2 teaspoons peppermint extract

2 tablespoons heavy cream or milk

2 to 3 drops green food coloring, optional

1 1/2 cups semi-sweet chocolate chips

2 tablespoons unsalted butter


Instructions

1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.

2. In a large bowl, whisk the melted butter and granulated sugar until smooth.

3. Add the eggs and vanilla extract, then whisk until glossy.

4. Stir in the cocoa powder, flour, and salt just until combined.

5. Spread the batter into the prepared pan and bake for 22 to 26 minutes, until the center is set and a toothpick comes out with a few moist crumbs.

6. Let the brownie layer cool completely in the pan.

7. In another bowl, beat the softened butter, powdered sugar, peppermint extract, and heavy cream until smooth and spreadable. Add green food coloring if using.

8. Spread the mint filling evenly over the cooled brownies. Chill for 20 to 30 minutes.

9. Melt the chocolate chips with 2 tablespoons butter until smooth.

10. Pour the melted chocolate over the mint layer and spread evenly.

11. Chill until the top is set, about 45 minutes to 1 hour.

12. Slice into squares and serve.

Notes

Mint extract is strong, so start with the smaller amount if you prefer a softer mint flavor.

For the cleanest slices, chill the brownies fully and use a warm knife wiped clean between cuts.

These brownies taste even better the next day after the layers have had time to settle and firm up.
