Description
Honey Garlic Chicken and Rice is an easy one pan dinner made with tender chicken, fluffy rice, garlic, honey, and soy sauce for a sweet savory meal that is perfect for busy weeknights, family dinners, and comforting meal prep.
Ingredients
2 pounds boneless skinless chicken thighs
1 1/2 cups long grain white rice
3 cups chicken broth
1/3 cup honey
1/4 cup low sodium soy sauce
5 cloves garlic, minced
1 tablespoon olive oil
2 tablespoons unsalted butter
1 small onion, finely diced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1 tablespoon cornstarch
2 tablespoons water
2 green onions, sliced
1 tablespoon chopped parsley
Instructions
1. Pat the chicken dry and season both sides with salt, black pepper, and paprika.
2. Heat the olive oil in a large deep skillet over medium high heat, then brown the chicken for 3 to 4 minutes per side. Transfer to a plate.
3. Lower the heat to medium and melt the butter in the same pan. Add the diced onion and cook until softened, then stir in the garlic and cook briefly until fragrant.
4. Add the honey and soy sauce and stir well. In a small bowl, mix the cornstarch with the water, then stir it into the pan to lightly thicken the sauce.
5. Stir the uncooked rice into the sauce, then pour in the chicken broth and scrape up any browned bits from the bottom of the pan.
6. Return the chicken to the skillet and spoon a little sauce over the top.
7. Cover and simmer over low heat for 18 to 22 minutes, until the rice is tender and the chicken is cooked through.
8. Rest for 5 minutes, fluff the rice gently, then finish with sliced green onions and chopped parsley before serving.
Notes
Use chicken thighs for the juiciest texture, but chicken breasts can work if you watch the cooking time closely.
Keep the heat low during the covered simmer so the rice cooks evenly without scorching on the bottom.
Add a splash of broth when reheating leftovers to bring back the soft texture of the rice and sauce.
