Description
Witches Soup is a hearty Halloween soup made with ground beef, beans, vegetables, pasta, and a rich tomato broth for a cozy, family-friendly dinner that is easy to make and perfect for chilly nights.
Ingredients
1 tablespoon olive oil
1 yellow onion, diced
3 cloves garlic, minced
1 pound ground beef
2 carrots, sliced
2 celery stalks, sliced
1 green bell pepper, diced
1 can diced tomatoes, 14.5 ounces
1 can tomato sauce, 15 ounces
6 cups beef broth
1 can cannellini beans, drained and rinsed, 15 ounces
1 can kidney beans, drained and rinsed, 15 ounces
1 cup small pasta shells
1 teaspoon Italian seasoning
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
2 cups baby spinach
1/4 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
Instructions
1. Heat the olive oil in a large soup pot over medium heat. Add the onion, carrots, celery, and bell pepper. Cook for 5 to 6 minutes until the vegetables begin to soften.
2. Stir in the garlic and cook for 30 seconds until fragrant.
3. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess grease if needed.
4. Pour in the diced tomatoes, tomato sauce, and beef broth.
5. Stir in the cannellini beans, kidney beans, Italian seasoning, smoked paprika, salt, and black pepper.
6. Bring the soup to a gentle boil, then lower the heat and let it simmer for 15 minutes.
7. Add the pasta shells and continue simmering for 10 to 12 minutes, or until the pasta is tender.
8. Stir in the baby spinach and cook for 2 minutes until wilted.
9. Ladle into bowls and top with Parmesan cheese and fresh parsley before serving.
Notes
Use small pasta shapes so every spoonful has a little bit of everything and the soup stays easy to eat.
If you plan to store leftovers, cook the pasta separately and add it to each bowl before serving so it does not soak up too much broth.
For extra Halloween fun, serve the soup with spooky shaped crackers or toasted bread on the side.
