Description

These crispy beef tacos are perfect for taco night, game day, or a family meal when you want bold Mexican-inspired flavor with a crunchy finish.


Ingredients

2 1/2 pounds chuck roast

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1 medium yellow onion, sliced

4 cloves garlic, minced

1 cup beef broth

1/2 cup salsa

1 tablespoon lime juice

12 small corn tortillas

2 cups shredded Oaxaca or Monterey Jack cheese

1/4 cup chopped cilantro

1 small red onion, finely diced

1 avocado, sliced

1/2 cup sour cream or Mexican crema

1 lime, cut into wedges


Instructions

1. Pat the chuck roast dry and season it with salt, black pepper, garlic powder, onion powder, cumin, chili powder, and smoked paprika.

2. Heat the olive oil in a Dutch oven or heavy pot over medium-high heat and sear the beef on all sides until browned.

3. Add the sliced onion and cook for 3 to 4 minutes until softened, then stir in the minced garlic.

4. Pour in the beef broth, salsa, and lime juice, scraping up any browned bits from the bottom of the pot.

5. Cover and cook on low for 3 to 3 1/2 hours, or until the beef is fork tender and easy to shred.

6. Shred the beef in the pot and stir it into the cooking juices so it stays moist and flavorful.

7. Warm the corn tortillas slightly so they bend without cracking.

8. Fill each tortilla with shredded beef and cheese, then fold in half.

9. Heat a large skillet over medium heat and cook the tacos for 2 to 3 minutes per side until crispy and golden with melted cheese.

10. Serve hot with cilantro, diced red onion, avocado, sour cream or crema, and lime wedges.

Notes

Use chuck roast for the best tender shredded texture and rich flavor.

Do not overfill the tacos or they will be harder to crisp evenly in the skillet.

Store leftover beef separately and crisp fresh tacos when ready to serve for the best texture.
