Description

This Ultimate Teriyaki Chicken Stir-Fry Recipe with Rainbow Veggies & Wild Rice is a quick, colorful, and healthy dinner idea featuring homemade teriyaki sauce, lean chicken, and vibrant vegetables over hearty wild rice. Perfect for weeknights, meal prep, or family meals.


Ingredients

1 lb chicken breast or thighs

2 cups broccoli florets

1 red bell pepper, sliced

1 cup carrots, sliced

1 cup snow peas

1 small red onion, sliced

3 cloves garlic, minced

1 tbsp fresh ginger, grated

1/3 cup soy sauce

3 tbsp brown sugar

2 tbsp rice vinegar or mirin

1 tbsp cornstarch

1 tsp sesame oil

2 cups cooked wild rice


Instructions

1. Chop all vegetables and chicken, and prepare the sauce ingredients before starting to cook.

2. In a bowl, whisk together soy sauce, brown sugar, garlic, ginger, and vinegar. Separately mix cornstarch with a little water and add it to the sauce.

3. In a hot skillet or wok with a little oil, cook the chicken pieces until browned and cooked through. Set aside.

4. In the same pan, stir-fry the vegetables starting with carrots and broccoli, then add peppers, onions, and snow peas.

5. Return the chicken to the pan and pour in the teriyaki sauce. Stir and cook until the sauce thickens and glazes the ingredients.

6. Serve hot over bowls of wild rice. Finish with a drizzle of sesame oil and optional sesame seeds or scallions.

Notes

Use chicken thighs for more flavor and juiciness.

Cut all veggies to similar sizes for even cooking.

Add red pepper flakes to the sauce if you like it spicy.
