Description

Strawberry Eclair Cake is an easy no bake dessert made with graham crackers, vanilla pudding, whipped topping, cream cheese, and fresh strawberries for a creamy layered treat that is perfect for potlucks, holidays, summer parties, and make ahead dessert tables.


Ingredients

2 boxes instant vanilla pudding mix

3 cups cold milk

8 ounces cream cheese, softened

1 cup powdered sugar

8 ounces whipped topping, thawed

18 to 21 graham crackers

1 pound fresh strawberries, sliced

16 ounces strawberry frosting or strawberry glaze


Instructions

1. In a large mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.

2. In a separate bowl, whisk together the instant vanilla pudding mix and cold milk until it begins to thicken.

3. Fold the pudding mixture into the cream cheese mixture until smooth.

4. Gently fold in the whipped topping until the filling is light and fully combined.

5. Arrange a single layer of graham crackers in the bottom of a 9×13-inch baking dish.

6. Spread half of the creamy filling over the graham crackers.

7. Scatter half of the sliced strawberries over the filling.

8. Add a second layer of graham crackers on top.

9. Spread the remaining filling evenly over the graham crackers.

10. Add the remaining sliced strawberries.

11. Finish with a final layer of graham crackers.

12. Spread the strawberry frosting or strawberry glaze evenly over the top.

13. Cover and refrigerate for at least 6 hours, or overnight for the best texture.

14. Slice and serve chilled.

Notes

Use fully softened cream cheese so the filling turns out smooth without lumps.

Let the cake chill overnight if possible because the graham crackers soften best with extra time.

Pat the strawberries dry before layering so the filling stays thick and creamy.
