Ingredients
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder

1/2 cup strawberry puree
1/4 cup sour cream
2 to 3 drops pink food coloring, optional

6 fresh strawberries, sliced for garnish
Instructions
1. Preheat the oven to 350°F and grease two 9-inch round cake pans, then line the bottoms with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a large mixing bowl, beat the butter and granulated sugar until light and fluffy.
4. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
5. Stir in the strawberry puree and sour cream until combined.
6. Add the dry ingredients in batches, alternating with the milk, and mix just until the batter is smooth.
7. Add a little pink food coloring if you want a brighter strawberry cake color.
8. Divide the batter evenly between the prepared pans and smooth the tops.
9. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
10. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack and cool completely.
11. For the frosting, beat the butter and cream cheese until creamy.
12. Add the powdered sugar gradually, then mix in the strawberry puree and vanilla extract until fluffy.
13. Place one cake layer on a serving plate, spread frosting on top, add the second layer, and frost the top and sides.
14. Garnish with fresh sliced strawberries before serving.
Notes
Use room temperature butter, eggs, cream cheese, and milk for the smoothest batter and frosting.
Do not overmix the batter once the flour is added or the cake may turn dense.
Chill the frosted cake for 20 to 30 minutes before slicing if you want cleaner layers.
