Description

Softbatch Cream Cheese Chocolate Chip Cookies are thick, soft, bakery-style cookies made with cream cheese, brown sugar, and plenty of chocolate chips for a rich, tender bite that stays soft for days.


Ingredients

1 cup unsalted butter, softened

4 oz cream cheese, softened

1 cup light brown sugar, packed

1/2 cup granulated sugar

1 large egg

2 tsp vanilla extract

2 1/4 cups all-purpose flour

2 tsp cornstarch

1 tsp baking soda

1/2 tsp salt

2 cups semi-sweet chocolate chips


Instructions

1. Preheat the oven to 350°F and line two baking sheets with parchment paper.

2. In a large bowl, beat the softened butter, cream cheese, brown sugar, and granulated sugar until smooth and fluffy.

3. Add the egg and vanilla extract, then mix until fully combined.

4. Stir in the flour, cornstarch, baking soda, and salt just until no dry streaks remain.

5. Fold in the chocolate chips evenly throughout the dough.

6. Cover and chill the dough for 1 hour so the cookies bake up thick and soft.

7. Scoop the dough into medium portions and place them on the prepared baking sheets about 2 inches apart.

8. Bake for 9 to 11 minutes, until the edges are lightly set and the centers still look slightly soft.

9. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Softened cream cheese blends best and keeps the dough smooth without lumps.

Chilling the dough is important if you want thick cookies with soft centers.

Do not overbake because the cookies continue setting as they cool on the pan.
