Ingredients
2 ½ lbs beef chuck roast
4 cloves garlic
3 chipotle peppers in adobo sauce
1 cup beef broth
2 tablespoons apple cider vinegar
2 tablespoons lime juice
1 tablespoon ground cumin
1 teaspoon dried oregano
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Cut the beef chuck roast into large chunks and season with salt and pepper.
2. Add garlic, chipotle peppers, beef broth, apple cider vinegar, lime juice, cumin, and oregano into a blender and blend until smooth.
3. Place the beef into the slow cooker and pour the blended sauce over the meat.
4. Cover and cook on low for 8 hours or high for 4 to 5 hours until the beef is tender.
5. Shred the beef using two forks and return it to the sauce. Let it sit for 10 minutes before serving.
Notes
For a milder flavor, reduce the number of chipotle peppers.
Searing the beef before slow cooking adds extra depth of flavor.
Letting the shredded beef sit in the sauce enhances the taste even more.
