Ingredients
1 1/2 pounds steak
1/4 cup olive oil
1/4 cup soy sauce
2 tablespoons Worcestershire sauce
2 tablespoons lemon juice
1 tablespoon balsamic vinegar
1 tablespoon brown sugar
3 cloves garlic, minced
1 teaspoon Dijon mustard
1 teaspoon black pepper
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon red pepper flakes
Instructions
1. In a medium bowl, whisk together the olive oil, soy sauce, Worcestershire sauce, lemon juice, balsamic vinegar, brown sugar, minced garlic, Dijon mustard, black pepper, onion powder, smoked paprika, and red pepper flakes until fully combined.
2. Place the steak in a shallow dish or a large zip top bag and pour the marinade over it, turning the steak so it is coated on all sides.
3. Cover or seal and refrigerate for at least 30 minutes or up to 8 hours depending on the cut of steak and how strong you want the flavor.
4. Remove the steak from the refrigerator 20 to 30 minutes before cooking so it can come closer to room temperature.
5. Take the steak out of the marinade and pat it lightly dry with paper towels for better browning.
6. Grill, pan sear, or broil the steak over medium high to high heat until it reaches your preferred doneness.
7. Let the steak rest for 5 to 10 minutes before slicing so the juices stay in the meat.
8. Slice against the grain and serve warm.
Notes
Tender cuts like ribeye and strip steak need less marinating time than tougher cuts like flank or sirloin.
Do not marinate the steak too long because the acid in the marinade can change the texture of the meat.
Patting the steak dry before cooking helps create a better sear and keeps the outside from steaming.
