This easy skillet chicken recipe is perfect for weeknights when you want comfort food that feels hearty, creamy, and full of homemade flavor.


Ingredients

2 large chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika

2 tablespoons olive oil

2 tablespoons butter

4 garlic cloves, minced

1 cup chicken broth

3/4 cup heavy cream

1 teaspoon fresh thyme

2 tablespoons fresh parsley, chopped

2 pounds russet potatoes, peeled and cubed

4 tablespoons butter

1/2 cup milk

1/4 cup sour cream

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Place the peeled and cubed potatoes in a large pot of salted water and bring to a boil. Cook until fork tender, about 15 to 18 minutes.

2. Pat the chicken breasts dry and season both sides with salt, black pepper, and paprika.

3. Heat the olive oil in a large skillet over medium heat. Sear the chicken for 5 to 6 minutes per side until golden and nearly cooked through. Remove the chicken and set aside.

4. In the same skillet, add 2 tablespoons of butter and the minced garlic. Cook for about 30 seconds until fragrant.

5. Pour in the chicken broth and scrape up the browned bits from the bottom of the skillet. Stir in the heavy cream and fresh thyme. Simmer for 3 to 4 minutes until slightly thickened.

6. Return the chicken to the skillet and spoon the sauce over the top. Simmer for another 4 to 5 minutes until the chicken is fully cooked.

7. Drain the potatoes and return them to the pot. Add 4 tablespoons butter, milk, sour cream, salt, and black pepper. Mash until smooth and creamy.

8. Spoon the mashed potatoes onto plates, top with the chicken, and finish with the warm garlic herb sauce and chopped parsley.

Notes

For extra juicy chicken, do not overcrowd the skillet and let the chicken rest briefly before serving.

If your sauce thickens too much, add a small splash of chicken broth to loosen it before serving.

For the creamiest mashed potatoes, mash them while they are still hot and avoid overmixing.
