Ingredients
28 oz whole canned tomatoes
10 oz diced tomatoes with green chiles
1/2 cup white onion
2 cloves garlic
1 jalapeno
1/2 cup fresh cilantro
2 tbsp fresh lime juice
1/2 tsp ground cumin
1 tsp salt
1/2 tsp sugar
Instructions
1. Add the whole canned tomatoes, diced tomatoes with green chiles, white onion, garlic, jalapeno, cilantro, lime juice, cumin, salt, and sugar to a blender or food processor.
2. Pulse several times, then blend briefly until the salsa is smooth but still has a little texture.
3. Taste the salsa and adjust the salt, lime juice, or jalapeno if needed.
4. Transfer the salsa to a bowl or airtight jar and refrigerate for at least 30 minutes so the flavors can come together.
5. Stir once more before serving, then enjoy with tortilla chips, tacos, quesadillas, burrito bowls, or grilled meats.
Notes
Use less jalapeno for a milder salsa, or keep the seeds in for more heat.
