Ingredients
1 box red velvet cake mix
2 large eggs
1/3 cup vegetable oil
3/4 cup white chocolate chips
1/2 cup powdered sugar optional
Instructions
1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
2. Add the red velvet cake mix, eggs, and vegetable oil to a large mixing bowl.
3. Stir until a thick cookie dough forms with no dry patches left.
4. Fold in the white chocolate chips until evenly mixed through the dough.
5. Scoop the dough into evenly sized balls using a cookie scoop or spoon.
6. Roll each dough ball in powdered sugar if you want a crackled finish.
7. Place the dough balls on the prepared baking sheet with space between each one.
8. Bake for 9 to 11 minutes until the edges are set and the centers still look slightly soft.
9. Let the cookies cool on the baking sheet for 5 minutes.
10. Transfer to a wire rack and cool completely before serving or storing.
Notes
For even baking, make all the dough balls close to the same size.
Rolling the dough in powdered sugar gives the cookies a pretty crinkle top.
Store the cooled cookies in an airtight container to keep them soft.
