Ingredients
1 cup unsalted butter, softened
1 cup brown sugar, packed
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups old-fashioned oats
2 cups crispy rice cereal
1 cup sweetened shredded coconut
Instructions
1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
3. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.
4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
5. Add the dry ingredients to the wet ingredients and mix just until combined.
6. Fold in the oats, crispy rice cereal, and shredded coconut until evenly distributed.
7. Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
8. Bake for 10 to 12 minutes, until the edges are lightly golden and the centers are just set.
9. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Do not overmix the dough once the flour is added or the cookies can turn out tougher than expected.
For more even cookies, use a cookie scoop so each portion bakes at the same rate.
Let the cookies cool on the pan first so they can finish setting without breaking apart.
