Ingredients
1 small green cabbage, thinly sliced
1 medium onion, sliced
2 cloves garlic, minced
1 medium carrot, shredded
1 bell pepper, sliced
1 small scotch bonnet or habanero pepper, finely chopped
2 tablespoons vegetable oil
1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
1 tablespoon vinegar
1 teaspoon brown sugar
Salt to taste
Black pepper to taste
Instructions
1. Heat vegetable oil in a large skillet over medium heat.
2. Add sliced onion and minced garlic, cooking until soft and fragrant.
3. Stir in carrot, bell pepper, and scotch bonnet or habanero, cooking for a few minutes.
4. Add the sliced cabbage and thyme, mixing well to combine.
5. Cook for 8 to 10 minutes, stirring occasionally until cabbage is tender but slightly crisp.
6. Add vinegar, brown sugar, salt, and pepper, stirring to combine.
7. Cook for another 2 minutes, then remove from heat and serve warm.
Notes
Use less pepper if you prefer a milder dish, as scotch bonnet can be very spicy.
Do not overcook the cabbage to keep a slight crunch and vibrant texture.
Fresh thyme gives the best flavor, but dried thyme works well if needed.
