Description

Ingredients

1 lb chicken breast

2 tablespoons olive oil

4 cloves garlic, minced

3 cups chicken broth

8 oz pasta (penne or rotini)

1 cup heavy cream

1 cup grated parmesan cheese

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons chopped parsley (optional)


Instructions

1. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then sear until golden and fully cooked. Remove and set aside.

2. In the same skillet, add garlic and sauté for 30 seconds until fragrant.

3. Add chicken broth and bring to a simmer. Stir in pasta and cook uncovered, stirring occasionally, until tender and most liquid is absorbed.

4. Lower the heat and stir in heavy cream and parmesan cheese until smooth and creamy.

5. Slice chicken and return it to the pan. Stir to combine and heat through.

6. Garnish with parsley if desired and serve hot.

Notes

You can swap in your favorite short pasta like rigatoni or fusilli.
