Ingredients
2 cups Biscoff cookie crumbs
5 tablespoons unsalted butter, melted
16 ounces cream cheese, softened
1 cup Biscoff spread
3/4 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
1/4 cup Biscoff cookie crumbs, for topping
1/4 cup Biscoff spread, warmed for drizzling
6 whole Biscoff cookies, for garnish
Instructions
1. Crush the Biscoff cookies into fine crumbs and mix them with the melted butter until the texture looks like damp sand.
2. Divide the crumb mixture between 6 dessert cups and press it down gently to form the base.
3. In a large bowl, beat the softened cream cheese until smooth.
4. Add the Biscoff spread, powdered sugar, and vanilla extract, then mix until creamy and fully combined.
5. In a separate bowl, whip the heavy cream until stiff peaks form.
6. Fold the whipped cream gently into the Biscoff cream cheese mixture until light and fluffy.
7. Spoon or pipe the filling over the crust layer in each cup.
8. Chill the cups in the refrigerator for at least 3 hours, or until set.
9. Before serving, top with extra Biscoff crumbs, a drizzle of warmed Biscoff spread, and a whole Biscoff cookie if desired.
Notes
Use full-fat cream cheese for the best texture and richest flavor.
Make sure the cream cheese is fully softened before mixing so the filling stays smooth.
