Ninja Creami Lemon Cheesecake Protein Ice Cream is a creamy, tangy, high-protein frozen dessert made with lemon juice, cream cheese, and a smooth protein base for an easy homemade treat that tastes like cheesecake in ice cream form.
Ingredients
1 vanilla protein shake
2 oz cream cheese, softened
1/4 cup plain Greek yogurt
1 tbsp fresh lemon juice
1 tsp lemon zest
1 to 2 tbsp sweetener of choice
1/2 tsp vanilla extract
1 pinch salt
1 tbsp crushed graham crackers, optional mix-in
Instructions
1. Add the vanilla protein shake, softened cream cheese, Greek yogurt, lemon juice, lemon zest, sweetener, vanilla extract, and salt to a blender. Blend until the mixture is completely smooth.
2. Pour the mixture into a Ninja Creami pint container, making sure it does not go past the max fill line.
3. Place the pint on a level surface in the freezer and freeze for 24 hours, or until fully solid.
4. Remove the pint from the freezer, place it into the outer bowl, and process it using the Lite Ice Cream setting or Ice Cream setting.
5. Check the texture after the first spin. If it looks crumbly, add 1 to 2 tablespoons of milk or extra protein shake.
6. Run the Respin cycle until the ice cream becomes smooth and creamy.
7. If using graham crackers, make a small hole in the center, add the crumbs, and run the Mix-In cycle.
8. Scoop and serve immediately for the best texture.
Notes
Let the cream cheese soften before blending so the base turns out smooth and evenly flavored.
Fresh lemon juice and zest give the ice cream its bright cheesecake flavor, so bottled juice will not taste quite the same.
If the first spin looks powdery, do not worry. A small splash of liquid and one more respin usually fixes the texture perfectly.
