Description
Mini Chocolate Cake is a rich, moist, and easy small cake recipe made with cocoa powder, hot coffee, and creamy chocolate frosting. This homemade chocolate cake is perfect for date night, small celebrations, or whenever you want a soft and fudgy dessert for a few people without baking a full-sized cake.
Ingredients
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
3/4 cup granulated sugar
3/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 large egg
1/2 cup milk
1/4 cup vegetable oil
1 tsp vanilla extract
1/2 cup hot coffee
1 cup chocolate frosting
Instructions
1. Preheat the oven to 350°F and grease two 6-inch round cake pans, then line the bottoms with parchment paper.
2. In a medium mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until evenly combined.
3. Add the egg, milk, vegetable oil, and vanilla extract, then stir until the batter starts to come together.
4. Slowly pour in the hot coffee and mix gently until the batter is smooth and thin.
5. Divide the batter evenly between the prepared pans and bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
6. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack and cool completely.
7. Spread chocolate frosting over one cake layer, place the second layer on top, and frost the top and sides before slicing and serving.
Notes
This cake is small but rich, so it is ideal for 4 generous servings or 6 smaller slices.
Hot coffee deepens the chocolate flavor without making the cake taste like coffee.
For the softest texture, do not overmix the batter once the wet ingredients are added.
