Ingredients
3 cups corn kernels
1/4 cup mayonnaise
1/4 cup sour cream
1/2 cup cotija cheese, crumbled
2 tablespoons fresh lime juice
1 garlic clove, minced
1 teaspoon chili powder
1/4 cup cilantro, chopped
2 green onions, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Char the corn in a skillet or on a grill until lightly browned.
2. In a large bowl, whisk together mayonnaise, sour cream, lime juice, garlic, chili powder, salt, and pepper.
3. Add the charred corn, cotija cheese, cilantro, and green onions to the dressing.
4. Mix everything until evenly coated.
