Loaded Baked Potato Casserole is a creamy, cheesy potato casserole packed with bacon, sour cream, cheddar cheese, and green onions for the ultimate comfort food side dish that is perfect for holidays, potlucks, and easy family dinners.
Ingredients
3 pounds russet potatoes
6 tablespoons unsalted butter
1 cup sour cream
1/2 cup whole milk
2 cups shredded sharp cheddar cheese, divided
8 slices bacon, cooked and crumbled, divided
4 green onions, thinly sliced, divided
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Peel the potatoes, cut them into large chunks, and boil them in salted water for 15 to 20 minutes until fork-tender. Drain well.
2. Return the hot potatoes to the pot and add the butter, sour cream, milk, garlic powder, salt, and black pepper. Mash until mostly smooth.
3. Stir in 1 1/2 cups of the cheddar cheese, half of the bacon, and half of the green onions.
4. Preheat the oven to 375°F and grease a 9×13-inch baking dish.
5. Spread the potato mixture into the prepared baking dish in an even layer.
6. Top with the remaining cheddar cheese and the rest of the bacon.
7. Bake for 20 to 25 minutes until hot and bubbly and the cheese is fully melted.
8. Sprinkle the remaining green onions over the top, let it rest for 5 minutes, and serve warm.
Notes
For the fluffiest texture, use russet potatoes since they mash beautifully and give the casserole that classic baked potato feel.
You can cook the bacon ahead of time to make assembly even faster on busy days or before holiday meals.
For extra color on top, broil the casserole for 1 to 2 minutes at the end, but keep a close eye on it so the cheese does not burn.
