¾ cup granulated sugar

2 large eggs

½ cup Greek yogurt or sour cream

⅓ cup vegetable oil

1 tablespoon lemon zest

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

8 ounces cream cheese

¼ cup powdered sugar


Instructions

1. In a small bowl, beat cream cheese with powdered sugar and ½ teaspoon vanilla extract until smooth. Set aside.

2. In a large bowl, whisk together flour, baking powder, and salt.

3. In another bowl, mix eggs, granulated sugar, yogurt, oil, lemon zest, lemon juice, and vanilla until smooth.

4. Fold wet ingredients into dry ingredients until just combined. Do not overmix.

5. Pour half of the batter into a greased loaf pan. Spread the cream cheese filling over it, then top with remaining batter.

6. Bake at 350°F (175°C) for 50–60 minutes, or until a toothpick comes out clean.
