Ingredients
2 large chicken breasts
1/2 cup all purpose flour
2 large eggs
3/4 cup Romano cheese grated
1/2 cup Parmesan cheese grated
3 tablespoons olive oil
2 tablespoons butter
3 cloves garlic minced
1/2 cup chicken broth
1/4 cup fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Slice the chicken breasts into thin cutlets and season both sides with salt and pepper.
2. Prepare three bowls with flour, beaten eggs, and a mixture of Romano and Parmesan cheese.
3. Dredge each chicken piece in flour, dip into eggs, then coat well in the cheese mixture.
4. Heat olive oil in a skillet over medium heat and cook the chicken until golden and cooked through, about 4 to 5 minutes per side.
5. Remove the chicken and set aside while preparing the sauce.
6. In the same pan, sauté garlic until fragrant, then add chicken broth and lemon juice.
