Ingredients
2 tablespoons olive oil
1 medium yellow onion, chopped
3 garlic cloves, minced
3 cups shredded cooked chicken
6 cups chicken broth
1 cup whole milk or half and half
3/4 cup ricotta cheese
1 cup shredded mozzarella cheese
1/3 cup grated Parmesan cheese
8 lasagna noodles, broken into pieces
1 teaspoon Italian seasoning
2 cups fresh spinach
Salt and black pepper to taste
Instructions
1. Heat olive oil in a large soup pot over medium heat. Add chopped onion and cook until translucent.
2. Stir in garlic and cook for 1 more minute until fragrant.
3. Add chicken broth, bring to a simmer, and stir in shredded cooked chicken and Italian seasoning. Let simmer for 5 minutes.
4. Add broken lasagna noodles and simmer until tender, stirring occasionally.
5. Reduce heat and stir in milk or half and half.
6. Add ricotta, mozzarella, and Parmesan cheese. Stir until smooth and melted.
7. Add fresh spinach and stir until wilted.
8. Season with salt and pepper to taste, then serve warm.
