Ingredients
1 cup all-purpose flour
3/4 cup granulated sugar
1/4 cup unsweetened cocoa powder, divided
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
3/4 cup brown sugar
1 1/4 cups hot water
Instructions
1. Preheat the oven to 350°F and lightly grease an 8 inch square baking dish.
2. In a medium bowl, whisk together the flour, granulated sugar, 2 tablespoons of cocoa powder, baking powder, and salt.
3. Stir in the milk, melted butter, and vanilla extract until a smooth batter forms.
4. Spread the batter evenly into the prepared baking dish.
5. In a small bowl, mix the brown sugar with the remaining 2 tablespoons cocoa powder.
6. Sprinkle the brown sugar mixture evenly over the batter.
7. Slowly pour the hot water over the top. Do not stir.
8. Bake for 35 to 40 minutes, until the top is set and the bottom is rich and saucy.
9. Let the cake rest for 10 minutes, then serve warm with the pudding spooned from the bottom of the dish.
Notes
Use good quality unsweetened cocoa powder for the deepest chocolate flavor.
Do not stir after pouring the hot water over the top or the pudding layer will not form properly.
This cake is best served warm, especially with vanilla ice cream or whipped cream.
