Ingredients
2 1/2 cups powdered sugar
1/4 cup sweetened condensed milk

2 cups semisweet chocolate chips

Instructions
1. In a medium bowl, mix the sweetened condensed milk, softened butter, and peppermint extract until smooth.
2. Add the powdered sugar a little at a time and stir until a thick, soft dough forms.
3. Scoop portions of the mint mixture, roll them into balls, and flatten each one into a small disc.
4. Place the shaped patties on a parchment-lined tray and chill until firm, about 20 to 30 minutes.
5. Melt the semisweet chocolate chips with the coconut oil in short microwave intervals, stirring until smooth.
6. Dip each chilled peppermint disc into the melted chocolate, let the excess drip off, and place it back on the parchment.
7. Chill again until the chocolate coating is fully set.
