Homemade French Onion Soup is a rich, cozy classic made with caramelized onions, savory beef broth, toasted baguette, and melted Gruyère cheese for the ultimate comforting dinner or starter.
Ingredients
4 large yellow onions
3 tablespoons butter
1 tablespoon olive oil
2 cloves garlic, minced
1 tablespoon all-purpose flour
1/2 cup dry white wine
6 cups beef broth
1 teaspoon Worcestershire sauce
1 bay leaf
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 baguette, sliced
1 1/2 cups Gruyère cheese, shredded
1/2 cup mozzarella cheese, shredded
Instructions
1. Peel the onions and slice them thinly.
2. In a large heavy pot or Dutch oven, melt the butter with the olive oil over medium heat.
3. Add the onions and cook for 35 to 45 minutes, stirring often, until they are deeply golden, soft, and caramelized.
4. Stir in the garlic and cook for 1 minute.
5. Sprinkle in the flour and stir well for another minute.
6. Pour in the white wine and scrape the bottom of the pot to loosen all the browned bits.
7. Let the wine cook down for 2 to 3 minutes.
8. Add the beef broth, Worcestershire sauce, bay leaf, thyme, salt, and black pepper.
9. Bring the soup to a gentle simmer and cook uncovered for 20 to 25 minutes.
10. Remove the bay leaf and taste for seasoning.
11. While the soup simmers, toast the baguette slices until lightly crisp.
12. Ladle the soup into oven-safe bowls.
13. Top each bowl with toasted baguette slices, Gruyère cheese, and mozzarella cheese.
14. Broil for 2 to 4 minutes until the cheese is melted, bubbly, and lightly golden.
15. Serve hot.
Notes
For the best flavor, do not rush the onions. Slow caramelizing is what gives this soup its rich and classic taste.
Store the soup base separately from the bread and cheese so the topping stays crisp when reheated.
Gruyère gives the most traditional flavor, but adding a little mozzarella makes the topping extra melty and golden.
