Ingredients
1 cup cottage cheese
3 large eggs
1/2 cup milk
1/4 cup honey
1 teaspoon vanilla extract
1 tablespoon lemon zest
2 tablespoons lemon juice
1 1/2 cups rolled oats
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1 1/2 cups blueberries
Instructions
1. Preheat the oven to 375°F and lightly grease an 8×8-inch baking dish.
2. In a large bowl, whisk together the cottage cheese, eggs, milk, honey, vanilla extract, lemon zest, and lemon juice until smooth and creamy.
3. Add the rolled oats, baking powder, salt, and cinnamon, then stir until fully combined.
4. Gently fold in the blueberries, saving a small handful for the top if desired.
5. Pour the mixture into the prepared baking dish and spread it evenly.
6. Sprinkle the reserved blueberries over the top.
7. Bake for 35 to 40 minutes, or until the center is set and the edges are lightly golden.
8. Let the bake cool for 10 minutes before slicing and serving.
Notes
This bake tastes wonderful warm, but it also chills well and makes an easy grab-and-go breakfast later in the week.
For a stronger lemon flavor, add a little extra zest on top right before serving.
Frozen blueberries can be used, but add them straight from the freezer so they do not bleed too much into the batter.
