Ingredients
2 to 3 cod fillets
2 cups cherry tomatoes
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh dill, chopped
1/2 cup Greek yogurt
2 tablespoons mayonnaise
1 clove garlic, minced
1 tablespoon lemon juice
Instructions
1. Preheat oven to 400°F. Toss cherry tomatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until blistered.
2. In a bowl, mix Greek yogurt, mayonnaise, garlic, dill, and lemon juice. Season with salt and pepper. Chill until ready to serve.
3. Pat cod fillets dry and brush with olive oil. Season with salt and pepper.
4. Grill the cod over medium heat for 3-4 minutes per side, or until it flakes easily with a fork.
5. Plate the grilled cod, top with roasted tomatoes, and spoon over creamy dill sauce.
6. Serve warm and enjoy immediately.
Notes
This recipe is best served fresh.
You can use frozen cod, just thaw and dry thoroughly.
Add extra lemon juice to the dill sauce for more zing.
