Description

Garlic Parmesan Shrimp Skewers are a quick and flavorful seafood dinner made with juicy shrimp, garlic butter, Parmesan cheese, lemon juice, and simple seasonings. These easy grilled shrimp skewers are perfect for weeknight meals, summer cookouts, and light family dinners when you want a fast shrimp recipe with bold garlic Parmesan flavor.


Ingredients

1 1/2 pounds large shrimp, peeled and deveined

3 tablespoons unsalted butter, melted

2 tablespoons olive oil

4 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 tablespoon lemon juice

1 teaspoon Italian seasoning

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped fresh parsley

1 lemon, cut into wedges


Instructions

1. If using wooden skewers, soak them in water for 20 to 30 minutes. Pat the shrimp dry and thread them onto skewers.

2. In a medium bowl, whisk together the melted butter, olive oil, garlic, lemon juice, Italian seasoning, paprika, salt, and black pepper. Stir in 1/4 cup of the Parmesan cheese.

3. Brush the mixture over the shrimp skewers until well coated. Let them sit for 10 minutes while the grill or broiler heats.

4. Grill or broil the skewers over medium-high heat for 2 to 3 minutes per side, until the shrimp are pink and opaque.

5. Remove from the heat and sprinkle with the remaining 1/4 cup Parmesan cheese and the chopped parsley.

6. Serve immediately with lemon wedges on the side.

Notes

Use large or jumbo shrimp so they stay juicy and do not overcook too quickly.

Pat the shrimp dry before seasoning so the garlic butter coating sticks better.

Do not leave the shrimp on the heat too long because they can turn rubbery fast.
