Ingredients
1 cup unsalted butter, melted
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1/2 cup eggnog
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground nutmeg
1 1/2 cups powdered sugar
3 to 4 tablespoons eggnog
1/2 teaspoon vanilla extract
1/8 teaspoon ground nutmeg
Instructions
1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.
2. In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth and glossy.
3. Add the eggs, vanilla extract, and eggnog, then whisk until fully combined.
4. In a separate bowl, whisk together the flour, baking powder, salt, and nutmeg.
5. Stir the dry ingredients into the wet ingredients just until no dry streaks remain.
6. Spread the batter evenly into the prepared pan.
7. Bake for 28 to 34 minutes, until the edges are set and a toothpick inserted near the center comes out with a few moist crumbs.
8. Let the bars cool completely in the pan.
9. For the glaze, whisk together the powdered sugar, eggnog, vanilla extract, and nutmeg until smooth.
10. Spread or drizzle the glaze over the cooled bars.
11. Let the glaze set, then slice into 9 to 12 bars and serve.
Notes
Do not overbake the bars if you want them to stay soft and fudgy in the center.
Let the bars cool fully before adding the glaze so the topping stays smooth and sets properly.
For a stronger holiday flavor, add a little fresh grated nutmeg on top right before serving.
