Ingredients

1 pound fresh green beans

1 cup all purpose flour

2 large eggs

1 tablespoon water

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

vegetable oil for frying

ranch or dipping sauce for serving


Instructions

1. Wash the green beans, trim the ends, and pat them dry. For a more tender center, blanch them in boiling water for 2 minutes, then transfer to ice water and dry well.

2. Place the flour in one shallow bowl.

3. In a second bowl, whisk together the eggs and water.

4. In a third bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper.

5. Dip each green bean into the flour, then the egg mixture, then the breadcrumb mixture, pressing lightly so the coating sticks.

6. Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F.

7. Fry the coated green beans in small batches for 2 to 3 minutes, turning as needed, until golden and crisp.

8. Transfer to a paper towel lined plate or wire rack.

9. Serve warm with ranch or your favorite dipping sauce.
