Ingredients
2 cups milk
4 large eggs
1 cup pumpkin puree
1 tablespoon brown sugar
2 teaspoons pumpkin pie spice
1 teaspoon vanilla extract
8 slices brioche or challah bread
2 tablespoons butter for cooking
Instructions
1. In a large bowl, whisk together eggs, pumpkin puree, milk, brown sugar, pumpkin pie spice, and vanilla extract until smooth.
2. Dip each slice of bread into the custard mixture, letting it soak for 15–20 seconds on each side.
3. Heat butter in a skillet or griddle over medium heat.
4. Cook soaked bread slices for 3–4 minutes on each side until golden brown and cooked through.
