Description

Easy Steamed Cassava Cake is a soft, moist, and creamy Filipino dessert made with grated cassava, coconut milk, condensed milk, and eggs. This easy steamed cassava cake recipe delivers a rich coconut flavor, a tender chewy texture, and a simple homemade method that is perfect for dessert, merienda, or holiday gatherings.


Ingredients

2 lb grated cassava

1 cup coconut milk

1 can sweetened condensed milk

1 can evaporated milk

2 large eggs

1/4 cup sugar

1/4 cup melted butter

1 tsp vanilla extract

1/4 tsp salt


Instructions

1. Prepare a steamer with enough water and bring it to a gentle simmer. Grease an 8 inch round or square pan and line the bottom with parchment if desired.

2. In a large mixing bowl, whisk together the coconut milk, sweetened condensed milk, evaporated milk, eggs, sugar, melted butter, vanilla extract, and salt until smooth.

3. Add the grated cassava and stir until the mixture is fully combined and evenly blended.

4. Pour the batter into the prepared pan and smooth the top with a spatula. Cover the pan loosely with foil.

5. Place the pan in the steamer and steam for 50 to 60 minutes, or until the center is set and a toothpick inserted near the middle comes out mostly clean.

6. Remove the pan carefully and let the cake cool completely before slicing.

7. Serve at room temperature or chilled.

Notes

Use frozen grated cassava if needed, but thaw it fully and drain off excess liquid before mixing.

Covering the pan with foil helps keep condensation from dripping onto the cake while steaming.

Letting the cake cool completely makes it easier to slice cleanly and improves the final texture.
