Ingredients
2 large boneless skinless chicken breasts
1 packet dry onion soup mix
1 can cream of chicken soup
1 cup sour cream
1 medium yellow onion, thinly sliced
1 teaspoon garlic powder
1/2 teaspoon black pepper
1 tablespoon olive oil
1 cup shredded mozzarella cheese
1 tablespoon fresh parsley, chopped
Instructions
1. Preheat the oven to 375°F and lightly grease a medium baking dish.
2. Heat the olive oil in a skillet over medium heat, then cook the sliced onion until softened and lightly golden.
3. In a mixing bowl, stir together the cream of chicken soup, sour cream, dry onion soup mix, garlic powder, and black pepper until smooth.
4. Fold the cooked onions into the sauce mixture.
5. Place the chicken breasts in the prepared baking dish in an even layer.
6. Spoon the onion sauce over the chicken, covering each piece well.
7. Cover the dish with foil and bake for 25 minutes.
8. Remove the foil and continue baking for 10 to 15 minutes, or until the chicken reaches 165°F internally.
9. Sprinkle the mozzarella cheese over the top during the last 5 minutes of baking.
10. Let the dish rest for 5 minutes, then garnish with chopped parsley and serve.
Notes
If your chicken breasts are very thick, slice them in half lengthwise so they cook more evenly.
For even more flavor, add a few sautéed mushrooms to the sauce before baking.
This dish is especially good served over mashed potatoes, rice, or buttered noodles to catch the extra sauce.
