Ingredients

2 large chicken breasts, sliced into 4 thin cutlets

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup all-purpose flour

2 tablespoons olive oil

3 tablespoons butter, divided

3 cloves garlic, minced

3/4 cup chicken broth

1/3 cup fresh lemon juice

1 lemon, thinly sliced

2 tablespoons capers, drained

2 tablespoons fresh parsley, chopped


Instructions

1. Slice the chicken breasts horizontally into thin cutlets, then pat them dry with paper towels.

2. Season both sides of the chicken with salt and black pepper.

3. Lightly dredge each piece in flour and shake off the excess.

4. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium heat.

5. Add the chicken and cook for 3 to 4 minutes per side until golden and cooked through, then transfer to a plate.

6. Reduce the heat slightly and add 1 tablespoon of butter to the skillet.

7. Stir in the garlic and cook for about 30 seconds until fragrant.

8. Pour in the chicken broth and lemon juice, scraping up the browned bits from the bottom of the pan.

9. Add the lemon slices and capers, then simmer the sauce for 3 to 4 minutes.

10. Stir in the remaining 1 tablespoon of butter until the sauce looks glossy.

11. Return the chicken to the skillet and spoon the sauce over the top.

12. Let everything simmer together for 2 minutes, then sprinkle with fresh parsley and serve warm.

Notes

Pound the chicken to an even thickness if needed so it cooks quickly and stays tender.

Use fresh lemon juice for the brightest flavor and the best balance in the sauce.

Reheat leftovers gently with a splash of broth so the sauce stays smooth and the chicken does not dry out.
