Ingredients
1 cup cottage cheese
1 cup dark chocolate chips
2 tablespoons unsweetened cocoa powder
3 tablespoons maple syrup
1 teaspoon vanilla extract
1 pinch salt
Instructions
1. Add the cottage cheese to a blender or food processor and blend until completely smooth and creamy.
2. Melt the dark chocolate chips in the microwave in short intervals, stirring each time, until smooth.
3. Add the melted chocolate, cocoa powder, maple syrup, vanilla extract, and salt to the blended cottage cheese.
4. Blend again until the mixture is thick, glossy, and fully combined.
5. Line a small loaf pan or container with parchment paper and spread the fudge mixture evenly into the pan.
6. Smooth the top with a spatula and refrigerate for 2 to 3 hours, or until firm.
7. Lift the chilled fudge out of the pan, slice into 12 small squares, and serve cold.
