Ingredients
2 large boneless skinless chicken breasts
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
2 tablespoons olive oil
2 tablespoons butter
3 tablespoons all purpose flour
2 cups chicken broth
1 tablespoon heavy cream
1 teaspoon Worcestershire sauce
1 tablespoon chopped parsley
Instructions
1. Pat the chicken dry and slice each breast into thinner cutlets if needed. Season both sides with salt, black pepper, garlic powder, and onion powder.
2. Heat the olive oil in a large skillet over medium heat. Add the chicken and cook for 4 to 5 minutes per side until lightly golden. Transfer the chicken to a plate.
3. Reduce the heat slightly and add the butter to the same skillet. Sprinkle in the flour and whisk for 1 minute to make a roux.
4. Slowly pour in the chicken broth while whisking until smooth. Stir in the heavy cream and Worcestershire sauce. Simmer for 2 to 3 minutes until the gravy thickens.
5. Return the chicken and any juices to the skillet. Spoon gravy over the top and simmer for 6 to 8 minutes until the chicken is cooked through.
6. Sprinkle with chopped parsley and serve hot with mashed potatoes, rice, noodles, or biscuits.
Notes
Tenderizing or slicing the chicken into even cutlets helps it cook faster and more evenly.
