Ingredients

1 cup all-purpose flour

1/2 cup unsalted butter, softened

1 cup chopped pecans

8 ounces cream cheese, softened

1 cup powdered sugar

16 ounces whipped topping, divided

1 package instant vanilla pudding mix, 3.4 ounces

1 package instant cheesecake pudding mix, 3.4 ounces

3 cups cold milk

1 can pumpkin puree, 15 ounces

2 teaspoons pumpkin pie spice


Instructions

1. Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.

2. In a medium bowl, mix the flour, softened butter, and chopped pecans until a crumbly dough forms.

3. Press the crust mixture evenly into the bottom of the prepared baking dish.

4. Bake for 15 to 18 minutes, until lightly golden, then remove from the oven and let it cool completely.

5. In a mixing bowl, beat the cream cheese until smooth.

6. Add the powdered sugar and mix until fully combined.

7. Fold in 1 cup of whipped topping until the mixture is light and spreadable.

8. Spread the cream cheese layer evenly over the cooled crust.

9. In another bowl, whisk together the vanilla pudding mix, cheesecake pudding mix, and cold milk until it begins to thicken.

10. Add the pumpkin puree and pumpkin pie spice, then whisk until smooth.

11. Spread the pumpkin mixture carefully over the cream cheese layer.

12. Top with the remaining whipped topping and smooth it into an even layer.

13. Cover and refrigerate for at least 4 hours, or overnight for the best texture.

14. Slice into squares and serve chilled.

Use fully cooled crust before adding the cream cheese layer so the filling stays smooth and distinct.
