Description

Dump and Bake Chicken Parmesan Casserole is an easy baked pasta dinner made with tender chicken, marinara sauce, mozzarella, Parmesan, and dry penne for a simple one dish family meal. This chicken parmesan casserole is cheesy, comforting, hearty, and perfect for busy weeknights, meal prep, or cozy dinners at home.


Ingredients

2 cups cooked chicken breast, shredded or chopped

12 ounces penne pasta, uncooked

24 ounces marinara sauce

3 cups chicken broth

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons fresh parsley, chopped


Instructions

1. Preheat the oven to 400°F and lightly grease a 9×13-inch baking dish.

2. Add the uncooked penne, cooked chicken, marinara sauce, chicken broth, Italian seasoning, garlic powder, salt, and black pepper to the baking dish.

3. Stir everything together well so the pasta is evenly coated and the chicken is spread throughout the dish.

4. Cover the dish tightly with foil and bake for 35 minutes.

5. Remove the foil and stir the casserole gently to make sure the pasta is cooking evenly.

6. Sprinkle the mozzarella and Parmesan cheese evenly over the top.

7. Return the dish to the oven uncovered and bake for 10 to 15 minutes, until the cheese is melted and bubbly and the pasta is tender.

8. Let the casserole rest for 5 minutes before serving.

9. Top with fresh parsley and serve warm.

Notes

Use rotisserie chicken to make prep even faster.

Make sure the foil is sealed tightly during the first bake so the pasta cooks properly.

Add a little extra marinara when reheating leftovers to keep the casserole saucy.
