Description
Doritos Taco Casserole is a cheesy, hearty, easy weeknight dinner made with seasoned ground beef, crunchy Doritos, salsa, sour cream, and melted Mexican blend cheese for a bold taco casserole the whole family will love.
Ingredients
1 pound ground beef
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1 cup salsa
1 can (10 ounces) diced tomatoes with green chilies, drained
1 can (10.5 ounces) cream of chicken soup
1 cup sour cream
2 cups shredded Mexican blend cheese, divided
1 bag (9.25 ounces) Nacho Cheese Doritos, lightly crushed
2 green onions, sliced
Instructions
1. Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.
2. In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft. Drain excess grease.
3. Stir in the minced garlic and cook for 30 seconds.
4. Add the taco seasoning, salsa, and drained diced tomatoes with green chilies. Stir and simmer for 3 to 4 minutes.
5. Remove the skillet from the heat and mix in the cream of chicken soup, sour cream, and 1 cup of the shredded cheese until smooth and creamy.
6. Spread a layer of lightly crushed Doritos in the bottom of the prepared baking dish.
7. Spoon half of the taco mixture over the chips.
8. Add another layer of Doritos, then spread over the remaining taco mixture.
9. Top with the remaining 1 cup of shredded cheese.
10. Bake uncovered for 20 to 25 minutes, until hot and bubbly.
11. Let the casserole rest for 5 minutes before serving.
12. Sprinkle with sliced green onions and serve warm.
Notes
This casserole is best served fresh while the Doritos still have a little crunch on top.
For extra heat, use hot salsa or add sliced jalapeños to the meat mixture.
You can add your favorite toppings like lettuce, tomatoes, avocado, or extra sour cream right before serving.
