Ingredients
1 unbaked 9 inch pie crust
16 ounces cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
1 cup light corn syrup
3/4 cup light brown sugar, packed
2 tablespoons unsalted butter, melted
2 large eggs, lightly beaten
1 1/2 cups chopped pecans
1/4 teaspoon salt
Instructions
1. Preheat the oven to 350°F and fit the unbaked pie crust into a 9 inch pie plate. Chill the crust while you prepare the filling.
2. In a large mixing bowl, beat the softened cream cheese with the granulated sugar until smooth.
3. Add the vanilla extract and 2 eggs to the cream cheese mixture and mix until fully combined.
4. Pour the cheesecake filling into the chilled pie crust and spread it into an even layer.
5. In a separate bowl, whisk together the corn syrup, brown sugar, melted butter, 2 lightly beaten eggs, and salt.
6. Stir the chopped pecans into the pecan mixture until evenly coated.
7. Spoon the pecan mixture gently over the cheesecake layer, spreading it carefully across the top.
8. Bake for 50 to 60 minutes, or until the center is mostly set and the top is golden brown.
9. Cool the pie completely at room temperature, then refrigerate for at least 4 hours before slicing and serving.
Notes
Make sure the cream cheese is fully softened before mixing so the cheesecake layer turns out smooth.
If the crust edges brown too quickly, loosely cover them with foil during the final part of baking.
