Ingredients

8 ounces lo mein noodles

1 pound boneless skinless chicken breast, cut into bite size pieces

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/3 cup low sodium soy sauce

2 tablespoons brown sugar

2 tablespoons honey

1 teaspoon sesame oil

1 tablespoon cornstarch

1/2 cup water

1 cup broccoli florets

1/2 cup sliced carrots

1/4 cup sliced green onions

1 teaspoon sesame seeds


Instructions

1. Cook the lo mein noodles according to the package directions until just tender. Drain and set aside.

2. In a small bowl, whisk together the soy sauce, brown sugar, honey, sesame oil, cornstarch, and water until smooth.

3. Heat the olive oil in a large skillet or wok over medium high heat.

4. Add the chicken pieces and cook for 5 to 6 minutes until golden and cooked through.

5. Stir in the garlic and fresh ginger, then cook for 30 seconds until fragrant.

6. Add the broccoli and carrots and cook for 2 to 3 minutes until slightly tender but still crisp.

7. Pour the teriyaki sauce into the skillet and stir well.

8. Let the sauce simmer for 2 to 3 minutes until it thickens and becomes glossy.

9. Add the cooked noodles and toss until everything is evenly coated.

10. Finish with green onions and sesame seeds, then serve hot.

Notes

Use chicken thighs if you want a juicier and slightly richer flavor.

Do not overcook the noodles since they will cook a little more when tossed in the sauce.

A splash of water or broth helps loosen the noodles when reheating leftovers.
