Description

Delicious Amish Oatmeal Rhubarb Bars are a sweet and tangy dessert made with old-fashioned oats, buttery crumble, and a soft rhubarb filling. These easy rhubarb bars are perfect for spring baking, potlucks, family gatherings, and anyone who loves old-fashioned dessert bars with a rustic homemade flavor.


Ingredients

2 cups old-fashioned oats

2 cups all-purpose flour

1 1/2 cups brown sugar

1 teaspoon baking soda

1/2 teaspoon salt

1 cup unsalted butter, melted

4 cups fresh rhubarb, chopped

1 1/4 cups granulated sugar

3 tablespoons cornstarch

1/3 cup water

1 teaspoon vanilla extract


Instructions

1. Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.

2. In a large bowl, combine the old-fashioned oats, all-purpose flour, brown sugar, baking soda, and salt.

3. Pour in the melted butter and stir until the mixture becomes evenly crumbly.

4. Reserve about one third of the oat mixture for the topping.

5. Press the remaining mixture firmly into the bottom of the prepared baking dish.

6. In a saucepan over medium heat, combine the chopped rhubarb, granulated sugar, cornstarch, and water.

7. Stir frequently until the rhubarb softens and the filling thickens.

8. Remove the saucepan from the heat and stir in the vanilla extract.

9. Spread the rhubarb filling evenly over the crust.

10. Sprinkle the reserved oat mixture over the top.

11. Bake for 35 to 40 minutes, until the top is golden and the filling is bubbling at the edges.

12. Cool completely before slicing into bars and serving.

Notes

Use fresh rhubarb for the brightest flavor, but thawed and drained frozen rhubarb also works well.

Let the bars cool fully before slicing so the filling can set and hold its shape.

For a sweeter variation, stir in a small handful of chopped strawberries with the rhubarb.
