Description

Crunchy Chicken Noodle Casserole With Veggies is a creamy chicken noodle casserole packed with tender chicken, egg noodles, mixed vegetables, cheddar cheese, and a buttery crunchy topping, making it an easy family dinner and comforting baked casserole for busy weeknights.


Ingredients

12 ounces egg noodles

3 cups cooked chicken, shredded or diced

2 cups mixed vegetables

1 small onion, finely diced

2 cloves garlic, minced

2 cans condensed cream of chicken soup

1 cup sour cream

1/2 cup milk

1 1/2 cups shredded cheddar cheese

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

2 cups crushed cornflakes

3 tablespoons melted butter

2 tablespoons chopped parsley


Instructions

1. Preheat the oven to 375°F and grease a 9×13-inch baking dish.

2. Cook the egg noodles in salted boiling water until just tender, then drain well.

3. In a large bowl, stir together the cream of chicken soup, sour cream, milk, cheddar cheese, salt, black pepper, and dried thyme until smooth.

4. Mix in the onion and garlic, then fold in the cooked chicken, mixed vegetables, and noodles until everything is evenly coated.

5. Spread the mixture into the prepared baking dish in an even layer.

6. In a small bowl, toss the crushed cornflakes with the melted butter.

7. Sprinkle the buttered cornflake topping evenly over the casserole.

8. Bake for 30 to 35 minutes, until hot and bubbly and the top is golden brown.

9. Let the casserole rest for 5 to 10 minutes, then sprinkle with parsley and serve.

Notes

Use rotisserie chicken to save time and add extra flavor.

Do not overcook the noodles because they will continue to soften while baking.

Add the crunchy topping right before baking for the crispiest finish.
