Description

Crockpot Honey Garlic Chicken is an easy slow cooker chicken dinner made with tender chicken, honey, garlic, soy sauce, and a rich sweet savory glaze. This crockpot chicken recipe is perfect for busy weeknights, simple family meals, and meal prep, especially when served over rice or noodles.


Ingredients

2 pounds boneless skinless chicken thighs or chicken breasts

1/2 cup honey

1/2 cup low sodium soy sauce

1/4 cup ketchup

1 tablespoon rice vinegar

4 cloves garlic, minced

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes, optional

2 tablespoons cornstarch

3 tablespoons water

2 green onions, sliced

1 teaspoon sesame seeds, optional


Instructions

1. Place the chicken in the bottom of the crockpot in an even layer.

2. In a medium bowl, whisk together the honey, soy sauce, ketchup, rice vinegar, garlic, black pepper, and red pepper flakes if using.

3. Pour the sauce over the chicken, cover, and cook on low for 4 to 5 hours or on high for 2 to 3 hours until the chicken is fully cooked and tender.

4. Remove the chicken from the crockpot and shred it with two forks, or slice it if you prefer larger pieces.

5. In a small bowl, stir together the cornstarch and water until smooth.

6. Whisk the slurry into the sauce in the crockpot and cook on high for 10 to 15 minutes until the sauce thickens.

7. Return the chicken to the crockpot and toss it in the thickened sauce until well coated.

8. Top with sliced green onions and sesame seeds before serving.

Notes

Use chicken thighs for the juiciest and most tender result after slow cooking.

If you like a thicker sauce, let it cook a few extra minutes after adding the cornstarch slurry.

This chicken is especially good served over steamed rice, noodles, or mashed potatoes to soak up the sauce.
