Description

Crockpot French Onion Pot Roast is a tender, slow-cooked beef dinner made with chuck roast, sweet onions, beef broth, and rich savory gravy. This easy crockpot pot roast recipe is perfect for cozy family dinners, comfort food cravings, and simple make-ahead meals with classic French onion flavor.


Ingredients

3 to 4 pound chuck roast

2 large yellow onions, thinly sliced

2 cups beef broth

1 packet French onion soup mix

1 tablespoon Worcestershire sauce

3 garlic cloves, minced

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

4 sprigs fresh thyme

2 tablespoons cornstarch

2 tablespoons water


Instructions

1. Pat the chuck roast dry and season it all over with salt and black pepper.

2. Heat olive oil in a large skillet over medium-high heat and sear the roast on all sides until browned.

3. Add the sliced onions, garlic, and butter to the bottom of the crockpot.

4. Place the seared roast on top of the onions.

5. Sprinkle the French onion soup mix over the roast.

6. Pour in the beef broth and Worcestershire sauce, then add the fresh thyme.

7. Cover and cook on low for 8 to 9 hours or on high for 5 to 6 hours, until the beef is fork tender.

8. Transfer the roast to a plate and shred or slice it into large pieces.

9. If you want a thicker gravy, whisk together the cornstarch and water, stir it into the cooking liquid, and cook on high for 10 to 15 minutes more.

10. Return the beef to the crockpot or spoon the onion gravy over the top before serving.

Notes

Searing the roast first adds deeper flavor, but you can skip it if you need to save time.

For the richest sauce, use chuck roast rather than a leaner cut of beef.

This pot roast tastes even better the next day after the flavors have had more time to settle together.
