Crispy Oven-Baked Beef Taquitos are a quick and delicious Mexican-inspired dinner made with seasoned ground beef, melted cheese, and corn tortillas baked until golden and crunchy. These easy baked beef taquitos are perfect for weeknight meals, party platters, meal prep, and freezer-friendly family dinners.
Ingredients
1 pound ground beef
10 small corn tortillas
1 cup shredded cheddar cheese
4 ounces cream cheese
1/2 cup finely chopped onion
2 cloves garlic, minced
2 tablespoons taco seasoning
1/4 cup tomato sauce
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh cilantro
1/2 cup sour cream, for serving
1/2 cup salsa, for serving
1/2 cup guacamole, for serving
Instructions
1. Preheat the oven to 425°F and line a large baking sheet with parchment paper.
2. Heat a skillet over medium heat and cook the ground beef with the chopped onion until the beef is browned and the onion is soft. Drain any excess grease.
3. Stir in the garlic, taco seasoning, tomato sauce, salt, and black pepper. Cook for 2 to 3 minutes until the mixture is well combined.
4. Remove the skillet from the heat and stir in the cream cheese and shredded cheddar cheese until melted into the beef mixture.
5. Warm the corn tortillas in the microwave wrapped in a damp paper towel for 20 to 30 seconds so they roll without cracking.
6. Spoon a small line of filling onto each tortilla and roll tightly. Place each taquito seam-side down on the prepared baking sheet.
7. Brush or lightly spray the taquitos with olive oil.
8. Bake for 15 to 20 minutes, or until crisp and golden brown. Turn once halfway through for even browning if desired.
9. Sprinkle with chopped cilantro and serve hot with sour cream, salsa, and guacamole.
Notes
Use warm tortillas so they stay flexible and do not split while rolling.
Do not overfill the taquitos or the filling may spill out during baking.
For the crispiest texture, reheat leftovers in the oven or air fryer instead of the microwave.
