Ingredients
2 cups cooked shredded chicken
2 cans white beans (cannellini or Great Northern), drained and rinsed
3 cups chicken broth
1 can (4 oz) green chiles
1 cup corn (fresh, frozen, or canned)
1 medium onion, diced
3 cloves garlic, minced
8 oz cream cheese, softened
1/2 cup sour cream
1 teaspoon ground cumin
1/2 teaspoon chili powder
Salt and pepper to taste
Instructions
1. Heat oil in a large pot over medium heat. Add diced onion and sauté for 5 minutes until translucent.
2. Stir in the minced garlic and cook for another minute until fragrant.
3. Add chicken broth, green chiles, white beans, and corn. Stir and let it simmer for 10 minutes.
4. Mix in the shredded chicken, cumin, chili powder, salt, and pepper. Simmer for another 10 minutes.
5. Lower the heat and add cream cheese. Stir until fully melted and combined.
6. Stir in sour cream until smooth and creamy.
